Heard on the Street: Potbelly's opening day is on the calendar

It seems "soonish" is almost here.

A banner went up in April over Potbelly Sandwiches, 318 First Ave. S.W., saying it would be opening "soonish."

And now, the sandwich servers say their new downtown site will open its doors at 10:30 a.m. on June 11.

"Everyone is hired and ready to go," said Kim Gordon, one of the local owners.

Gordon, who owns the shop with her husband, Kirk Gordon, along with partners, John and Sandy Rognessand Bill and Erin Nystrom, says they have a team of 22 hired and ready to be trained.

"It's really looking great inside the shop," she said.

That includes a couple tables with unique tops, such as a built-in checkerboard/chess board or a Gopher logo in honor of the University of Minnesota Rochesterpresence above them in the 318 Commonscomplex.

On the walls is special wallpaper Kim Gordon fell in love with at a Potbelly shop in an airport in Boston.

And, of course, there will be an actual potbelly stove.

The menu features toasty warm sandwiches, as well as hand-dipped milkshakes and freshly baked cookies.

Another unique note to grabbing a noon-time bite at Potbelly's is that they have performers playing music live every day during the lunch hour.
