More coffee is on the way for Southeast Rochester as well as more retail space, though it will be at the cost of some asphalt.

Southgate Enterprises of New Hope filed for a permit to dig up more than an acre of the Cub Foods Plaza parking lot at 12th Street and 15th Avenue Southeast.

The idea is to clear the way for construction of a 627-square-foot Caribou Coffee shop plus a nearby 5,100-square-foot retail building in the area in front of the Cub-anchored shopping center.

The coffee shop, described as a “Caribou Cabin,” will be located along 15th Avenue Southeast.

“Caribou Cabins” are a concept the Minnesota company rolled out in 2019. The small shops feature a drive-thru and a walk-up service window, but no indoor seating.

The Cabins offer some different menu items, including “flavor-infused” drinks like sparkling waters, juices and sodas, all made using coffee beans

The permit did not list a lot of details about the retail building slated to be built on the 12th Street side of the lot, near Express Car Wash and Zadeo’s Pizza.

No proposed tenants were listed for the building. However, the permit did point to at least one tenant serving food. In calculating needed parking spaces, the permit stated planners should “assume 50 percent restaurant” for the building.

The first step before either building is constructed is to dig up the shopping center parking lot. Residents in that area should expect to see a lot of big machinery preparing the ground this summer.
