A pandemic isn’t slowing down Chef Pasquale Presa, who plans to launch an express version of Pasquale's Neighborhood Pizzeria in Southwest Rochester.
The gregarious Presa hopes to open Pasquale’s Express at 1219 Second St. SW, a short jaunt across the street from Mayo Clinic's Saint Marys Hospital. It's the 700-square-foot spot last occupied by Kibo Teriyaki Express and, before that, Tinn’s Grilled Philly Steak Subs.
Presa hopes to open the southwest sibling of his downtown shop by early June.
He compares Pasquale's Express to his Thursday’s on First and Third food stand. The menu will be focused on grab-and-go items, catering to hospital staff and visitors, who often don’t have a lot of time.
“It’s all about quick, high-quality, food,” he said. “We’ll have an express window. No sit-down. People can order and get a hot slice or an authentic stromboli or calzone. In and out in two to three minutes. Safe and secure."
In addition to hot pizza and salads, the new shop will also have a sweet side. Presa is teaming up with Chef Jenyce Habibovic of Rochester’s Sweet House Bakery.
Habibovic will start things off at 6 a.m. with a variety of coffee drinks, fresh croissants, cinnamon rolls and other pastries. At 10:30 a.m., she will hand off to Presa’s pizza team to start selling pizza and more into the evening.
“I just love what she (Habibovic) does,” Presa said.
On Sundays, Habibovic will take over the shop to sell cakes and cupcakes and offering decorating classes.
Thinking of all of the hotel guests in that area, Pasquale’s Express will also sell take-and-bake pizzas and Presa’s new line of frozen meals.
