The Med City’s popular Taco Lab food truck is ready to take its experiment to the next level with more trucks and a bricks-and-mortar restaurant.
Owners Jorge Mosquera and Enedino "Nino" Morales first hit Rochester’s streets with the Taco Lab truck and its unique offerings, such as The Mad Scientist taco, in August.
At different times, the truck can be found downtown, by Saint Marys Hospital, and in front of the former Daube’s Bakery along Civic Center Drive Northwest.
Now, Mosquera says they are transforming the ex-Daube’s building at 1310 Fifth Place NW into a space for a new restaurant. The hope is to open by mid- to late summer.
That Daube’s location closed in the spring of 2020.
Creativity and experimentation have been the hallmarks of the Taco Lab, so it shouldn’t be surprising that the restaurant will be something different, with a new menu and new brand.
“It will be something very similar to what we’re doing with Taco Lab, but we won’t be confined to the tacos,” said Mosquera. “People should expect creative, fusion, ‘outside of the box’ kind of food.”
The project is in the early stages, so they are still working out the details.
The first phase of the project is to bring the Daube’s kitchen back to life. After that is done, Mosquera hopes to cook up a larger fleet.
“We want to expand our taco truck operation to include at least one more food truck and maybe two,” he said. “We want to reach more areas of Rochester and maybe beyond.”
I’ll keep an eye on this to see what Mosquera and Morales end up creating in their lab.
