It looks like a plan for a new Caribou Coffee Co. drive-thru in Southeast Rochester is percolating again.
In May 2020, Southgate Enterprises of New Hope, Minn. filed for a permit to dig up more than an acre of the Cub Foods Plaza parking lot at 12th Street and 15th Avenue Southeast.
The idea was to clear the way for construction of a 627-square-foot Caribou Coffee shop in front of the Cub-anchored shopping center.
That project went quiet for the rest of 2020, but a new filing last week signals that it’s back on the front burner.
An architect from the Minneapolis-based Caribou filed new paperwork with the city for a “Fit out of new construction drive-thru only Caribou Coffee" at 1021 15th Ave. Southeast.
While the project description still references “Drive-thru and walk-up service only,” it’s unclear if the plan is still to build a stand-alone Caribou Cabin. The permit references “tenant improvement in existing building,” so it’s possible the plan has shifted from a cabin to adding a drive-thru to the Cub commercial center.
If the plan is to stick with the Caribou Cabin, that concept was rolled out in 2019. The small shops feature a drive-thru and a walk-up service window, but no indoor seating.
Cabin or not, a Caribou in that area will face some local competition for caffeine-craving customers.
In February, Katrina and Scott Pulham launched the popular Due North Coffee Co. trailer, nearby at 1607 Highway 14 East. It stands in front of their other Rochester business, the Air Insanity trampoline center.
