In honor of St. Patrick's Day, I am working on a catering event for a local business this week and the theme is green! We have worked together on this event for five years now, so it's a challenge to stay creative with one color, but it's been a fun project every March.
Here are some fun, festive green foods that we have served in the past. Perhaps it will inspire your menu one day this week.
Green pizza.Top a whole-grain thin crust with green toppings such as spinach, artichokes, tomatillos or pesto.
Green enchiladas.Fill a spinach wrap with rotisserie chicken, black beans, avocado and cilantro-lime rice. Top with green chile sauce and bake. Garnish with fresh cilantro. Serve with multigrain tortilla chips and guacamole.
Green pinwheels.Roll your favorite deli meat into a green spinach wrap lined with leaf lettuce.

Green salad.Top your lettuce salad with green veggies such as peppers, celery, broccoli and cucumber. Or, try something new like a kale salad with shaved Brussels sprouts. Top it with pistachios for added crunch.
Green chicken sandwiches.Substitute avocado for the mayo in your chicken salad recipe then add in chopped green apple, celery, grapes and roasted pumpkin seeds. Wrap in a spinach tortilla.
Green drinks.Add sliced limes to your water glass for added flavor and color.
Green smoothies.Blend vanilla Greek yogurt, avocado, spinach, pineapple and banana together to make a delicious yet nutritious smoothie.
Green dessert.Top a fruit pizza with kiwi and green grapes.
As part of the event, I am also planning a "Guess that Green" activity for employees. Can you name all the different greens? Challenge yourself to try a new one — collard greens, mustard greens, chard, spinach, kale or arugula.
