AMISH COOKBOOK Chicken-corn soup can hit the spot

We spent some time at sister Emma and Jacob's. Joe is helping Jacob train their two-year-old colt. They hitched her to the buggy for the first time on Monday. There can be some anxious moments when training a colt, but she did very well. Joe enjoys training colts.
While we were at Jacob's, Joe went back home to retrieve some items. When he didn't come back right away, sister Verena and I started home to see what was going on. When we came closer we saw lights flashing in front of our house, but they started leaving as we came closer. There had been a car/tractor wreck almost in front of our house and Joe went to see if he could help. So he had been waiting to come as he couldn't get through the blocked road. The man in the car died yet that night. This must've been a shock to family and friends. Life is so uncertain. It's good we don't know what the future holds.
Also on Monday, Emma had done her laundry so we helped her get it in and folded. Sisters Verena and Susan helped get mine out early and most of it was dry before we left for Jacob's. Joe, Jacob, and Susan did hoeing out in the garden. I think Jacob's glad for all that got done. Emma had deep-fried fish, creamed potatoes, salad (with fresh lettuce), onions, radishes, cheese, and ice cream for our dinner.
Sunday we went to church at Joe's sister Loretta and Henry's in Michigan. We started out at 4:30 a.m. and had breakfast halfway there. I always enjoy when I get a break from cooking. The children mostly slept on the way there. Jacob, Emma, and children and sisters Verena and Susan went also. In the afternoon we visited with Joe's dad before starting for home.
We stopped in at Joe's sister Ruth and Chris to see how their daughter, Lydianne, is getting along. She's on the road to recovery but still very weak. They're glad to be together after three months in Mexico for doctoring.
Last Saturday, Jacob helped Joe form up new walkways in front of our house. Tuesday evening they cemented the walks. It looks so much better now with the new walks and our yard has been leveled out and grass sown. Our yard has been torn up since we had 11 tree stumps removed. Another of our hens has hatched 13 baby chicks so we have 21 chicks so far.
A reader requested a chicken-corn soup recipe.
Lancaster County chicken-corn soup
One 4- to 5-pound chicken, cut into 8 pieces
2 1/2 to 3 quarts water, or as needed
1 large onion
8 to 10 black peppercorns
2 teaspoons salt, or to taste
10 ears of corn, (or 4 cups frozen corn kernels)
3 celery stalks, diced with leaves
6 ounces wide egg noodles (or use your own homemade equivalent)
Freshly ground white pepper
2/3 cup finely chopped fresh parsley
2 hard-cooked eggs, chopped
Place chicken in soup pot with enough water to cover. Bring to boil, reduce heat, and skim foam as it rises to the surface. When it has subsided, add onion, peppercorns and salt. Simmer gently but steadily, partly covered, for about 1 1/2 hours or until tender. Remove chicken. Trim and discard bones and skin, and onion. Let soup cool, then skim fat from surface. Tear meat into spoonable pieces and return to soup.
Cut kernels from 4 ears of corn, then grate kernels from remaining 6 ears. Add whole kernels and grated or pureed corn to soup along with celery and noodles. Simmer gently until corn and noodles are cooked. Add salt and white pepper to taste. Stir in parsley and serve, garnishing each portion with chopped egg. Yield: 4 to 6 bowls of soup. This soup freezes well, but do that before adding the noodles.
