Construction of a new Rochester restaurant is in the home stretch.

Five West Kitchen + Bar, created by the team behind The Loop Bar and Grill in downtown Rochester, is nearing "the finish line," according to co-owner Ryan Brevig. The goal is to open in early September, possibly on Labor Day weekend.

The new 7,800-square-foot restaurant is being built at the corner of 19th Street Northwest and West Circle Drive in the northwest development anchored by Costco.

Recently, the name of it was changed to Five West from the original idea of Citizen Kitchen & Bar.

"We weren't getting the best feedback on the name 'Citizen,'" Brevig said. "Five West seemed like a good fit."

This will be the fifth place opened by Brevig and his business partners, Todd Jensen, Derek Link and Josh Paulsen, who are all 1997 John Marshall High School graduates. In recent years, partner Jonathan Buck joined and brought the ownership team up to five.

"The biggest challenge right now is hiring the entire staff," he said.

They are looking for about 65 employees. The hiring is being done at The Loop.

When asked what people can expect at Five West, Brevig said one standout feature will be the patio of the contemporary casual restaurant.

"We're really excited about the patio. It will seat 85 people and have its own bar. There will also be a 'fire table' that people will be able to sit at," he said, adding that the patio will overlook a large, colorful, lighted fountain. — Jeff Kiger
