Buttermilk cinnamon bread

4 cups flour

2 teaspoons baking soda

1 teaspoon salt

1/2 cup vegetable oil

2 1/2 cups sugar, divided

2 cups buttermilk

2 eggs

1 tablespoon ground cinnamon

1 to 2 tablespoons chopped walnuts per loaf

In large bowl whisk together flour, baking soda and salt. In another bowl combine oil and 1 1/2 cups sugar. Add buttermilk and eggs and mix well. Stir into dry ingredients until just moistened. Fill 2 greased 8-by-4-by-2-inch loaf pans about 1/3 full. Combine the cinnamon and rest of sugar and sprinkle over half of the batter. Top both pans with rest of the batter and rest of the cinnamon mixture. Swirl batter with a knife and then sprinkle nuts over the top. Bake at 350 for 45-55 minutes or until bread tests done. Cool in pan 10 minutes before removing to a rack to cool.

Krispie krunchies

1 cup butter

1 cup sugar

1 cup brown sugar

2 eggs

2 teaspoons vanilla

Cream above ingredients for 3 minutes. Then add:

2 cups flour

1/2 teaspoon baking powder

1 teaspoon baking soda

2 cups oatmeal

2 cups Rice Krispies

2 cups coconut

Drop by rounded teaspoons on cookie sheets. Bake at 350 for 8-10 minutes. Let set for 2 minutes before removing from pan.

Strawberry bread

3 cups flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon cinnamon

One 20 ounce box frozen strawberries, thawed

1 cup oil

4 eggs

Preheat oven to 350. Grease and flour 2 loaf pans. Combine dry ingredients and whisk together. Make well in center of flour and add all of liquid ingredients. Mix with a spoon and pour mixture into 2 greased loaf pans. Bake for one hour or until bread tests done. This bread freezes well. Slice thinly before bread is completely thawed.

Chocolate chip cookies

1 cup butter, room temperature

1/4 cup sugar

3/4 cup brown sugar, packed

1 teaspoon vanilla

2 eggs

1 small package vanilla instant pudding mix (4 serving size)

2 1/4 cup flour

1 teaspoon baking soda

One 12-ounce package chocolate chips

1 cup chopped nuts (optional)

Cream together butter and sugars. Add eggs and vanilla. Mix well again. Add pudding mix. Stir in soda and flour. Add chips and nuts. Drop by teaspoonfuls onto cookie sheet and bake 8-10 minutes in a 375 oven.

Mel's brownies

1/2 cup butter, melted

1 cup sugar

2 eggs

1 teaspoon vanilla

1/3 cup unsweetened cocoa powder

1/2 cup flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup chopped nuts (optional)

Frosting:

3 tablespoons butter

3 tablespoons unsweetened cocoa powder

1 tablespoon honey

1 teaspoon vanilla extract

1 cup powdered sugar

Preheat oven to 350. Melt 1/2 cup butter. Remove from heat and stir in sugar, eggs and vanilla. Mix well. Add cocoa, flour, salt and baking powder. Mix well. Spread batter into greased 8-by-8-inch square baking pan and bake for 25 minutes. To make frosting combine all ingredients in a bowl and mix well. These brownies are better made a day ahead.
