The Winter Farmers Market will be open from 9 a.m. to noon Saturday at Graham Park’s building 41 at the Olmsted County Fairgrounds in Rochester.
After that, the market will be Feb. 7 and 14 and April 11 and 25.
Produce at market this week includes: Apples, cabbage, garlic, kale, onions, pumpkins, radishes, shallots, carrots, beets, celeriac, potatoes, root vegetables, winter squash, greenhouse lettuce and salad makings.
From the pasture: Hand-crafted cheeses, farm-fresh eggs; USDA processed, hormone-free meats; grass-fed and corn-fed beef; natural lamb; pork, chicken, and turkey; goat, elk and bison.
Preserved from summer gardens: Salsa; bruschetta; apple chips; jams, jellies, chutney, relishes, pickles, fruit butters; tomato sauce; dried shitake mushrooms; dried chipotle peppers.

From the oven: Breads, cinnamon rolls, cookies, pies, cakes, muffins and bars.
Specialty: Popping corn; honey; maple syrup; apple cider; wide and thin cut egg noodles; peanut brittle, cashew crunch, fudge; chocolate-covered bacon; candles, soaps; elk antler capsules; buffalo hides and robes; gourds; gourd bowls; potted herb plants and fresh rosemary sprigs; home-spun wool crafts; dried-plant decorations.
