BYRON -- Byron's blossoming business district will get a boost when a Subway sandwich shop opens its doors later this month.
Tony Meyer, vice president of operations and owner of the new shop, said the 1,500-square-foot store will have eight to 12 employees when it opens July 23. He said he wants to staff it primarily with Byron residents, and about 24 applications have been received at the Subway shop in Kasson, which he also owns.
The restaurant will be at 821 Frontage Road N.E. It is one of many businesses expected to occupy the 50,000- to 60,000-square-foot development planned for Byron's east side along U.S. 14.

When completed in September 2004, the development will include buildings for a McDonald's, an Eastwood Bank branch, an Olmsted Medical Center facility, a real estate office and a grocery store.
Plans also include a $110,000 renovation of the frontage road to allow easier access to the stores.
Road construction is expected to be completed this summer, to be followed by business construction.
Meyer also owns Subway shops in Stewartville, St. Charles, Chatfield, Rushford and Spring Valley. He said he's wanted a store in Byron for about three years but was waiting for the Minnesota Department of Transportation to decide what it would do with the roadway.
"I would have hated to have put up the store and have it been in the wrong spot," he said.
