Today at 11 a.m., the Stagecoach Saloon opened its doors north of Rochester and stepped into the boots of a local legend from the past.
The Stagecoach, owned by Kevin and Lynnell Thompson, opened in the former Edgewood Restaurant located in a scenic wooded setting along U.S. 52, near Cannon Falls.
Very popular in years past, it has sat empty for more than three years. Manager Jennifer Erickson says the long-closed eatery has been revamped into a Western theme with a new bar as well as new carpets, paint and tile.
Expect a bar menu with hamburgers and broasted chicken to start with, though the Thompsons hope to expand it later. She has 12 on staff.
The Thompsons, who live nearby, bought the building three years ago with hopes of leasing or selling it. Since the economy has not made that easy to do, they finally decided to opened a place of their own.
